Gluten Free Hashbrown Crust Quiche

Gluten Free Hashbrown Crust Quiche recipe for Easter and Spring Entertaining.

A Spring Brunch Classic for Easter, St. Patrick’s Day & Simple Gatherings

There is something about early spring entertaining that calls for recipes that feel fresh but comforting. This gluten free hashbrown crust quiche was always one of our favorites for Easter brunch, St. Patrick’s Day mornings, baby showers, and slow Saturday gatherings when the windows are open and the table is set simply but intentionally.

Step 3 - Baked Crust

Instead of a traditional flour crust, this version uses thawed frozen hashbrowns pressed into a pie dish and baked until golden and crisp. The result is buttery edges without any gluten, and a savory base that pairs beautifully with sharp New York cheddar and bright green onions. It’s easy enough for a weeknight, elegant enough for a bridal shower, and sturdy enough to make ahead for holiday mornings.

This is the kind of recipe that anchors a spring table — letting everything else stay simple.

Gluten Free Hashbrown Crust Quiche

Serves 6–8

9-inch pie dish

Ingredients

For the Hashbrown Crust

  • 20 oz frozen shredded hashbrowns, thawed
  • 3 tablespoons melted butter
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper

For the Filling

  • 6 large eggs
  • ½ cup whole milk (or half-and-half for richer texture)
  • 2 cups freshly shredded sharp New York cheddar
  • ½ to ¾ cup sliced green onions
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Step 1: Prepare the Hashbrown Crust

  1. Preheat oven to 400°F.
  2. Place thawed hashbrowns in a colander and press firmly to remove excess moisture. (This step is key for crispness.)
  3. In a large bowl, combine hashbrowns, melted butter, salt, and pepper.
  4. Press mixture firmly into a greased 9-inch pie dish, pressing up the sides evenly.
  5. Bake at 400°F for 20–25 minutes, or until edges are golden brown and beginning to crisp.

This par-bake step gives the crust structure and keeps it from getting soggy once the egg mixture is added.

Step 2: Prepare the Filling

  1. In a mixing bowl, whisk eggs, milk, salt, and pepper until fully combined.
  2. Stir in shredded sharp cheddar and sliced green onions.
  3. Remove crust from oven and reduce oven temperature to 375°F.
  4. Pour egg mixture carefully into the hot crust.

Step 3: Bake the Quiche

  1. Bake at 375°F for 30–35 minutes, or until the center is just set and no longer jiggly.
  2. If the crust edges brown too quickly, lightly tent with foil.
  3. Let rest for 10–15 minutes before slicing.

Step 4 - Egg Mixture

  • Make the crust the night before and store covered.
  • Add sautéed spinach for Easter brunch.
