One of the phrases I heard on Thursday night ALL the time was , “Mom, can ‘so and so’ sleep over?” It was an almost weekly routine in the almost dozen years my girls were pre-teens to teenagers.
Usually pancakes were on the menu at least one weekend morning, and always bacon. My daughters were such fans of bacon that my youngest would even heat up bacon after school on dip it in queso…she’s never been over a size 2, so those genes didn’t come from me 🙂
As I was thinking of ways to host a sleepover party, I enjoyed reminiscing of all those many sleepovers. Flashlights, tents made of sheets, and always tons of giggles.
Here’s my little recipe for a fun and super simple breakfast the next morning.
Gluten Free Pancake Breakfast for a Pancakes and Pajamas Party
What you will need:
Gluten Free Pancake mix (I used Live G Free Pancake Mix)
Bacon or sausage (or heck, why not both?)
Maple syrup (or chocolate chips, nutella, or other fun pancake toppings!)
Cute glasses for the juice
Individual fun plates
Make the pancake mix, according to directions, the night before if possible. Put it into a squeeze bottle, like the one pictured below for SUPER easy pancake making. I added about 1.5 times the amount of milk the mix called for to make the batter thinner and a dash of almond extract (I made mine gluten free, as we are a gluten free – Celiac – house) to easily squeeze out small half dollar pancakes. They make such cute little stacks, and perfect for stacking in individual dishes for everyone.
In the morning, start cooking the bacon or sausage and heat up the pan for the pancakes.
Serve up the fruit, pancakes and sausage or bacon in cute little individual dishes. Top the pancakes with the little flags. Everyone will feel so special!
