Here’s our take on a Low Country Boil that we’ve made time and again as we enjoy beach rentals in Hilton Head.
One of our family’s favorite summer-time vacation spots is Hilton Head, SC. Its pristine beaches and relaxed style inspire family-style suppers – and they are usually filled with cousins teasing each other, and happy family time. We take turns cooking different nights, in our summer rental so no one has to do all the work. It’s a week we longingly look forward to each year, and the memories we’ve made will last our us all a lifetime.
Hilton Head – Low Country Boil
2 lbs baby red potatoes, scrubbed (any significantly larger potatoes cut in half )
6 ears of corn, shucked and each broken into 3 pieces
2 lbs of fresh Italian or garlic and herb link sausage, cut into 2 inch pieces
4 lbs of peeled and deveined small shrimp
8 cups of chicken or turkey broth
One package of salt sisters brand Savannah Low Country Boil seasoning mix or 1/4 cup of Old Bay Seasoning
3 tbsp of kosher salt
Place potatoes in the bottom of a 6-8 quart stock pot. Cover with enough water so that the water is 3-4 inches above the potatoes. Add the broth, salt and the seasoning mix. Bring all to a boil and cook potatoes an additional 5 minutes after it begins to boil.
Add the sausage and the corn. Cook an additional 7 minutes or until the potatoes are fork tender.
Add the shrimp and boil for 3-4 minutes until shrimp turns pink. Reduce to a simmer and call the family in for supper.
Serve with additional Old Bay seasoning or hot sauce for those that like a little heat!
