Jam Glazed Chicken Legs (Drumsticks)
a gluten-free and dairy-free recipe
1/2 cup of jam (choose your flavor) – I used a combination of sour cherry and pineapple shiracha!
8-10 chicken drumsticks
Olive oil for baking dish
Fresh chopped herbs for a garnish
Preheat oven to 375F.
Rinse and pat dry the chicken. Sprinkle a little bit of olive oil (1 TSP) in an 8*11 baking dish. Use a paper towel to coat the sides and the bottom.
Heat the jam in the microwave for 30 seconds to a minute. Stir jam (you want it to be thin, but not burn!)
Place the chicken in prepared pan. Brush the heated jam over the tops of each drumstick.
Bake for 30-45 minutes (juices will be clear.)
Serve and Enjoy!
