Quick Refrigerator Pickles – Rosemary and Sage

This is a much loved quick refrigerator pickles recipe of my mom, and I finally tried making it myself a few summers ago.  They are perfect with a grilled cheese sandwich or a burger.  I’ve packed them up in smaller jars for easy backyard BBQ and picnic sides.  They are the perfect quick pickles to keep in the fridge for all your summer entertaining.

I recently picked up a large jar to double the recipe, since these pickles disappear so fast!  The refrigerator pickles recipe below can easily be doubled if you want to do the same. No processing required!  Just into the fridge!

Quick Refrigerator Pickles – Rosemary and Sage

1/3 cup apple cider vinegar

1 T. Kosher or Sea Salt (not iodized)

1 cup of cold water

1 T. lemon juice (or lime)

1 small red or white onion, thinly sliced

2 cups of sliced cucumbers, Kirby or pickling

2 to 4 springs of rosemary

4 to 8 sage leaves

Combine vinegar and salt in a saucepan.  Bring to simmer and stir until salt is dissolved. Remove from heat, add water and lemon juice and let cool.

Meanwhile, tightly pack onions, cucumbers, rosemary, and sage in clean 16 oz glass canning jar. 

Pour the cooled liquid in the jar to cover vegetables and herbs.  Refrigerate 1 hour until thoroughly chilled.  (I almost always wait 1 day before serving.)

BONUS RECIPE- Pickled Heirloom Tomatoes

You can use the same vinegar/water/salt/lemon juice mixture for pickled tomatoes too!

1/3 cup apple cider vinegar

1 T. Kosher or Sea Salt (not iodized)

1 cup cold water

1 T. lemon juice (or lime)

2 cups vertically quartered tomatoes* (can be green, part ripe or red)

2-4 garlic cloves

1/2 cup fresh herbs of choice (basil, dill, chives, lemon basil)

*Be sure tomatoes are firm, or they will fall apart.

Cover the tomatoes and garlic and herbs just like the cucumber version above!
