This unicorn bark is super easy, and it’s even more special because of the ‘hidden’ sprinkles right inside the candy – using a little secret – Wilton’s Colorburst Pastels Candy Melts. You can choose your favorite sprinkles, but if you want to copy mine, I’ve listed the exact ones I’ve used below. This unicorn bark makes the perfect unicorn or rainbow party favor.
I feel like I’m right back in 4th grade with all the unicorns and rainbows everywhere. It’s a fun trend and I’m hopping on board. You wouldn’t believe how excited my ladies group was when I said I was going to make some. You would have thought we were talking around a cafeteria table!
I use a double boiler method for my chocolate and candy barks, but the package directions indicate you CAN use a microwave with these little melts.
I’ve gone the pastel route here, but feel free to use brighter colors.
1 -10 oz bag of the Wilton Candy Melts, Colorburst Pastels (If not available, use a few other colored candy melts and swirl to mix)
1 – 11 oz bag of Ghiradelli Classic White Baking Chips
Your Choice of Fun Sprinkles, I used:
2 Tbsp Gold Stars by Wilton
1 Tbsp Wilton’s aqua-colored Blue Decorating Pearls
1 TBS of white Sparkling Sugar by India Tree
Fill a double boiler filled with a couple of inches of water (I put a large metal bowl atop a stockpot. You don’t want the bowl to be able to fit all the way down inside, just rest on top of the stockpot) The water should NOT touch the upper bowl.
The double boiler method uses steam to heat the bottom of your upper metal bowl to melt the candy disks. This allows the chocolate to melt, and not scorch.
Meanwhile, line a large rimmed baking sheet with parchment paper.
Once the water comes to a simmer. Place the upper bowl in place. Turn the heat to low. Add the candy disks.
With a rubber spatula gently stir the candy melts. You will see it start to melt against the bowl as it warms. Continue to stir the candy until it is melted. Drop in the Ghiradelli chips. Let melt in place for about 1 minute without stirring, then stir until fully melted.
Remove from heat (be careful as the bowl will be hot!) Wipe the bottom of the bowl with a towel (so that it doesn’t drip into candy later.
Pour onto the parchment-lined baking sheet. Use a rubber spatula to smooth it out a little. Tap the baking sheet so the candy flows out and levels.
Sprinkle with the large colored candies/sprinkles first, then the sprinkles, then the stars.
Place in a cool area or the freezer just until hardened. Once the bark is hard, snap pieces into triangles and other shapes. Barks are such an easy DIY party favor – you’ll want to use them again and again. See my Peppermint Bark and Salt and Pepper Hazelnut Bark recipes here on my Blog.
